Summer Mango Parfait

To me, nothing says summer like the sweet, juicy taste of mangoes. This Summer Mango Parfait is a wonderfully light and fresh dessert to end a warm summer evening.
The best part? It’s incredibly simple to make with just a handful of ingredients. Plus, it’s gut-friendly, thanks to the probiotics from full-cream yoghurt and the fiber from mango and nuts.
Ingredients (Serves around 6 people)
2 large mangoes
1kg full cream plain yoghurt
1/4 cup treacle sugar (or brown sugar)
1/4 cup chopped nuts (walnuts, pecans, almonds, pistachios etc)
Honey and basil/mint leaves to garnish
Method:
Peel the mango and slice it into thin, flat pieces.
In a large bowl, layer mango slices, followed by a few spoons of yoghurt to cover the mango, a generous sprinkle of treacle sugar, and ground nuts. Repeat the layers, ending with a yoghurt layer on top.
Place the parfait in the fridge for 4–6 hours to allow the flavors to meld and develop.
Before serving, top with an extra sprinkle of ground nuts, a swirl of honey, and garnish with fresh mint or basil leaves.
